Ingredients:
- 2 pounds of yam
- Enough water for boiling and pounding.
Directions:
- Get your yam, peel the yam and cut in into small chunks or pieces.
- Wash the yam pieces very well to remove any dirt and impurities.
- Get a pot and boil the yam pieces after rinsing them in cold water. Put the yam in the pot and put enough water to cover the yam and bring it to a boil. This process should take about 25-30 minutes. Boil until the yam becomes very soft.
- Once the yam is cooked, take it out of the heat and drain the remaining water out. Place the yam in the mortar and begin to pound the yam using a kind of twisting motion to break the larger chunks down and create a smooth texture.
- Continue pounding the yam and adding a little water occasionally to ease the pounding. Pound until the yam becomes stretchy and smooth; that is when it has reached the desired consistency, free of lumps.
