Ingredient For Healthy Carrot Muffin
– 2 cups Wheat flour
– 1 ½ teaspoons baking powder
– ½ teaspoon baking soda
– ½ teaspoon salt
– 1 teaspoon ground cinnamon
– ½ teaspoon ground nutmeg
– ½ cup granulated sugar
– ½ cup brown sugar
– ½ cup vegetable oil
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 ½ cups grated carrots
– ½ cup crushed pineapple, drained (optional)
– ½ cup chopped walnuts or pecans (optional)
PROCEDURES
Step one:
Gather your ingredients together to be ready for use. Then preheat your oven to 175°C. Bring out a muffin tin and line it with paper liners.
Step two:
Get a large bowl, Combine your dry ingredients; that is the flour, baking powder, baking soda, salt, cinnamon and nutmeg and whisk properly until they are all evenly distributed then set aside
Step three:
Get a separate bowl and combine your wet ingredients together, that is the eggs, Vegetable oil, vanilla extract, granulated sugar and brown sugar and whisk properly until well combined.
Step four: Carefully add the dry ingredients into the wet ingredients then mix properly until the ingredients are well combined and distributed. Note that you should be careful not to overmix the batter as this can result to a tough dough.
Step five:
Fold in your grated carrots into the batter. And if you are using the pineapple and nuts then you should add them as well. Fold them in properly.
Step six:
Distribute your batter to the prepared muffin cups evenly filling the cup 2/3 to the brim to avoid the muffin rising out if the cup.
Step seven:
Put the muffins in the preheated oven and bake for about 20 minutes more or less or bake until you insert a toothpick in the center of the muffin and it comes out clean. After baking take out the muffin and let it cool off for a bit in the tin then transfer them into a wire rack to cool off completely.
