Step One

In a bowl add some unsalted butter or vegan butter anyone preferable to your choice… then add some coconut sugar or brown sugar or white depends on the one you would prefer to use.
But coconut sugar is better because it’s less sweet and it gives the cookies a chewy, soft texture. Then add your vanilla extract and some eggs. This creates a wet mixture that would hold the cookies together
Step Three
In another bowl, mix your oat flour and baking soda and some pinches of salt, also a little white sugar if needed.
Whisk the dry ingredients together in a bowl and ensure it is mixed properly and it is evenly distributed accordingly.
Step Four
Add your wet and dry ingredients together in one bowl and mix accordingly until you get a thick, sticky dough.
Normally when using all-purpose flour you would be careful not to overmix the cookie dough as it can result to a tough cookie and we don’t want that but we are using oat flour for this delicious recipe so you don’t have to worry about over mixing the dough.
