Having the wrong combination or even cooking your chicken and rice can make your dish taste so bad. Like using a chicken that colors yellow or even has a mold can cause you a bad dish, so you have to be extremely careful when purchasing your ingredients.

1. One pot chicken and rice
INGREDIENTS:
- Chicken
You can’t seem to go wrong with this ingredient. I prefer using chicken thighs or chicken breast to get my dish to have an amazing taste, but also you can use your preferablechicken part.
- Rice
There are many types of rice you can choose from such as long rice, basmati rice, jasmine rice, white rice or any rice of your choice but most important get a rice that will give that good fluffy texture once it’s cooked.
- oil
In this case most people use different oil but it’s preferable if you use either olive oil or vegetable oil.
- Onion powder
For avoiding tears onion powder is used for this but on most occasions your diced onion will fit better.
- Garlic powder
Garlic is one of the most good medicinal ingredients and gives many health benefits, this ingredient adds its own flavor to this dish.
- Salt
Salt is a basic ingredient for cooking and also very important. Whereas there are many cooking salts you can use but the best salt is the kosher salt, this salt is one of the best because of its good impact on our food.
- Pepper
You have your chili pepper or your black pepper then you don’t have to fear because you’re on the right track.
- Chicken broth
- Vegetables: diced carrots, frozen peas and frozen corn
Note that your measurement for each ingredient matters a lot whether cooking for your family or an occasion you have to get the appropriate measurement for each ingredient. Too much or too small can make your dish go wrong.

- We start by seasoning our chicken, first we add the smoked paprika, onion powder or diced onion,garlic powder, pepper and salt in a bowl, then you mix properly.
- Pour your seasoned mixture on your chicken then mix properly.
- Heat your pan over medium heat, put your preferred oil into your pan and wait till it’s hot, when hot add your chicken. You wait till it is ready then remove from the pan. Tip: to know if your chicken is properly cooked check the sides of the chicken if it’s brown.
- Into a pot add your chicken broth and rice then stir, allow it to boil. Tip: make sure you get all the rice from the bottom of your pot to make sure all ingredients are combined properly.
- Once you see your rice boiling add your chicken into the pot and allow it to boil, make sure you boil in a low heat.
- In the process of boiling when your meal is almost ready to be out sprinkle your diced carrot, frozen corn and frozen peas. You cover your pot and allow it to cook with your rice and chicken.
- Your dish is done and ready to serve.
2. Jollof rice and chicken
Ingredient :
- Rice
For this part of the ingredient you have to make a correct choice to avoid sogginess and the best rice you should use are long rice.
- protein
Your chicken is one of the main ingredients for this dish and can’t be left out.
- Salt
Your kosher salt should be a hit for this dish and it is very important to your dish.
- Tomato paste and fresh tomato
This ingredient can change your whole dish and gives us that rich color if cooked properly and you must choose the right tomato paste
- Seasoning cubes
Our salt cant do all the work, without these cubes your dish will be tasteless and you can’t take the risk.
- Vegetables
These ingredients (diced carrots, sweet corn and your green peas) are not only good as per health benefits but also bring this dish to a whole new level .
- Bay leaves
A lot of people use this ingredient especially when it comes to this dish because it brings up the spice to the dish.
- Onion, garlic and ginger
There are different types of onion but if you want to make a perfect dish with perfect aroma it has to be red onion and this onion is known to be the best when it involves rice and your garlic and ginger should be washed and cut properly.
- Oil
This ingredient is mostly used in preparing a wide range of dishes and it is one of our ingredients today.
- Spice and leafs
We will use curry leaves, fresh thyme, and scotch bonnet pepper.
- pepper
We have our chili pepper which is also known as shombo, white pepper and some additional pepper you might want to use
Directions :
- In a pot pour your chicken, garlic and garlic powder, curry leaves and curry powder, fresh thyme, seasoning cubes, salt and diced onion. Then you mix properly, note that you should not use much scotch bonnet pepper.
- You cover your pot and allow it to boil with a medium low heat, then you open it and add little water to it to get your chicken broth.
- When it is done you turn your chicken in a different bowl keeping your chicken broth aside.
- Get your pepper, garlic, ginger and fresh tomatoes washed properly and cut into small bits so blending would be easier for you. Make sure you don’t add too much water when blending so that you can get a thick and smooth result. After blending you per boil and when ready you put it aside.
- Coming to the part where we fry our chicken, most people fry their protein plain and it does not taste good . Instead of frying your chicken with plain vegetable oil, why not add some onion and garlic? It will give your chicken a stunning taste and you will come thanking me. After frying and giving you that brown look you transfer to a bowl.
- Your chicken is set time for making the stew, we are going to remove our onion and garlic and set it aside. Now with low medium heat we are going to put our bay leaf into the vegetable oil to allow it to fry a little then we put our onion and tomato paste then fry till you see your stew like a little bubble, don’t over fry to avoid getting a burnt stew and sharp taste.
- As this is going on add you per boiled mixture and stir, if you feel your oil isn’t enough feel free to add oil but not too much.
- Add your thyme, white pepper, your seasoning cubes, salt and curry powder. Then you stir and allow to cook, to avoid splatter or burnt stew make sure you cover half way of the pot or don’t cover at all.
- Pour your per boiled rice into the stew and also add your chicken broth then stir then allow to cook.
- Here you add your veggies (diced carrots, frozen peas and frozen corn) sprinkled on top of the rice then you cover your pot and allow it to cook.
- note that when covering your rice don not only use your pot cover but use some foil first to cover the pot before you use your pot cover, this is to prevent the vapor from coming out it needs to be inside the pot.
- Allow the rice to boil. It will take about 20-30 mins but if you’re not confident based on the amount or type of rice you’re using feel free to check to avoid you getting burnt rice. When it’s finally done stir till the bottom to check your rice if it got burnt.
- Your rice is ready and ready to serve.
You cannot put too many ingredients or too small. It matters a lot in these dishes, I can bet this will taste good and also be your favorite too.
