- 500 grams of gizzards(cleaned and cut into small pieces)
- 2 ripe plantains (diced)
- 2 tomatoes (diced)
- Pepper
- 1 onion, finely chopped
- ½ red bell pepper(diced)
- ½ of green bell pepper(diced)
- 2 cloves of garlic, minced
- 1 teaspoon of ginger paste
- 1 teaspoon of chili powder
- Salt
- 1 teaspoon of thyme
- 1 teaspoon of curry powder
- 1 teaspoon of paprika
- ½ cup of chicken or vegetable stock
- Vegetable oil for frying

Procedure On How To Make Gizdodo:
Step one: Start by cooking your Gizzard. Wash and cut the Gizzard into small pieces and boil it until it becomes tender. The boiling should take up to 20-30 minutes. Add a sprinkle of salt while boiling.
Step two: While your gizzard is cooking, fry the diced plantains. Fry in hot oil until it becomes golden brown. After frying, set it aside.
Step three: Get a pan, sauté the onions along with the bell peppers, ginger paste and minced garlic. Sauté until they become fragrant and slightly softened.
Step four: While still sautéing add your spices, add the chili powder, thyme, paprika and curry powder then stir properly until everything is coated evenly.
Step five: Then add the diced tomatoes and let it cook until the tomatoes release juices. This is going to create a flavourful and tasty base for the Gizdodo.
Step six: Add the gizzards. By this time, the gizzard must have cooked. Drain the water out and add it to the pan and keep sautéing with the other ingredients then add in your fried plantains. Stir properly and let it sauté with the other ingredients for some minutes.
Step seven: Add in the chicken broth or the vegetable stock. This is important because it keeps the dish moist by creating a delicious sauce. After adding the stock, let it cook for a few minutes to let the flavors meld in.
Step eight: Season the Gizdodo with salt and pepper, and taste to see if it needs adjusting. After adding the salt and pepper, stir properly and bring the pan out of the heat.
